First Beets

These lovely little beets are the first ones out of the garden this year and the first ever beets I’ve grown! On the left is a Cylindra beet and on the right is a Chioggia beet.

I used them along with some beets from the CSA, tomatoes, lettuce from the garden and more of this amazing dressing to make a delicious salad for dinner tonight. I usually don’t eat beets raw but they were pretty tasty!
