Last week I posted three recipes to make with oats – here’s one more!
While we were waiting in line for our after-swim coffee on Sunday we both couldn’t help but stare at the fudge oatmeal squares at Starbucks. We haven’t had a lot of sweets in the house lately because we’re trying to cut back but they looked so delicious that I couldn’t stop myself from making something similar when we got home. They are super rich, so a little square goes a long way!
Chocolate Fudge Oat Squares
1 cup butter
2 cups brown sugar
1 tsp vanilla
3 cups flour
3 cups rolled oats
1 tsp baking soda
1 can of sweetened condensed milk
2 cups chocolate chips (about 1 small bag)
Preheat over to 350F
Set aside 2 tbsp of butter. Mix the remaining butter and brown sugar in an electric stand mixer until fluffy. Beat in eggs and vanilla until well mixed.
In a separate bowl, mix together flour, rolled oats and baking powder. Slowly add the dry ingredient to the butter mixture, beating well to form a crumbly dough.
Press about 2/3 of the dough into a greased 9″ x 13″ pan. Set the remaining mixture aside
In a small sauce pan, melt the reserved butter over low heat. Add the condensed milk and chocolate chips and heat until melted and smooth, stirring occasionally. Pour the chocolate mixture over the oat mixture in the pan and spread to form an even layer. Crumble the remaining oat mixture over top of the chocolate layer.
Bake in the middle of the oven for about 25 minutes or until oat mixture on top starts to turn golden. Allow to cool before slicing into small bars.
